Why targeted spray is superior to humidification
Spraying Systems Co.® uses humidification widely. However, we do not recommend it for carcass chilling.
When humidification takes place, mist is being sprayed into the air to increase the humidity level. The downside of humidification for carcass chilling, is that it produces condensation on walls and ceilings, which also drips down onto the carcasses. It not only causes bacteria to multiply, but it also brings dirt down from the rails above. On top of that, condensation can ice up the air chillers which results in less efficient cooling or failing to achieve the needed temperature in the chill room.
